Nikon D70s help with settings?

I'm using my dad's Nikon D70s for my photography cl. Unfortunately, he doesn't have any instruction manuals for it and he doesn't really know how to use it either lol. How can i manually set shutter speed and aperture? also, It always flips the flash up no matter what lighting there is. How can i turn that off? Thanks for you time!
