Can an OT TB be trained out of this habit?

The problem you're experiencing with her is more than likely due only to being grained too heavily and not worked. She's got pent-up energy and wants to do something with it. You have to remember, too, that she was trained to run and probably enjoys it. I've had a few OT horses, TBs and Arabs, and most liked a good flat-out run every so often. I'd take them out to an open area a couple times a week and let them have a gallop after I warmed them up. They enjoyed it, I enjoyed it, and it cut down a lot on the sort of 'prancy' behavior and trouble getting them slowed out of a canter you're describing. Sometimes when an animal is bred selectively to perform a specific task, the best way to solve a lot of behavioral issues is to let them do the job they were bred to do.
